Lemon White Chocolate Chip Macadamia Cookies

Hello again!  I hope everyone had a stellar weekend!  Here in Nebraska, we’ve had quite the heat storm (I was actually called off work today because it was too hot!), it has been over 90 degrees almost every day this week.  And not only is it HOT, it is also humid.  That kind of humid where you walk outside and it feels like someone just threw a bucket of water at you.  So, after working 23 hours in the past two days, and dealing with this hot, humid weather, I feel that I deserve a treat.  That’s where these cookies come in.

I haven’t posted any sweets in awhile, mostly because I’ve been trying to stay away from them, but I needed some sugar, I needed some real bad.  These definitely did the trick.  The lemon paired with the rich sweetness of the chocolate makes them almost refreshing, which was ideal.  I’m not one for loading up my cookies with chocolate chips, so I have fewer in mine that some people would like.  Feel free to add extra to the amount I have!

Ingredients1 1/2 C flour
1/2 tsp baking soda
1/4 tsp salt
1/2 C butter
1/3 C sugar
1/2 C brown sugar
1 egg
1 1/2 tsp Vanilla
zest and juice from 1/2 lemon
1 C white chocolate chips
1/2 C macadamia nuts, chopped

Directions
In a medium bowl, whisk the flour, baking soda, and salt together

In the bowl of a mixer, beat the butter and sugars until fluffy, about 2 minutes.  Add the egg, vanilla, lemon juice and lemon zest and mix until smooth.

Combine the dry ingredients with the wet and mix until just combined.  Stir in the chocolate chips and macadamia nuts.

Cover the dough and let chill in the refrigerator for 30 minutes.

Preheat the oven to 350 degrees and place parchment paper on pans.

Take about two tablespoons of dough and form a flat circle.  Place on pan an inch or so apart.

 

 

Bake for 8-10 minutes, until lightly golden brown.  Allow the cookies to cool for a minute or two before removing to a wire rack.

EAT.
