Baked Veggie Tacos

As some of you undoubtably know, Game of Thrones Season 7 started a couple weeks ago.  I’m a little late to the game as this is my first season watching as it’s released, but nonetheless I was so stoked for it to come out!  My roommate and I have actually had viewing parties the last couple weeks.  For the premier we (I) made deviled dragon eggs, bruschetta, and queso dip, along with a couple themed cocktails called The Mother of Dragon-Berries, and The Crow.  For this most recent episode, we (I) made baked tacos!  They were so good you guys.  Perfect for a party, vegetarian friendly, and inexpensive.

The veggies I used were green and yellow summer squash, white onion, mushrooms, and black beans for protein.  Normally I would mix my own seasoning, but I happened to have a package of fajita seasoning in my cupboard so I used that.  Feel free to make your own!  I used a blend of Pepper Jack and Cheddar cheese, however if you want your tacos to be vegan feel free to omit it.  If you are using cheese, try and buy it in block form, and shred it yourself.  The result will be much tastier!  To accompany the tacos, I made a cilantro sour cream, and chopped up some tomatoes.

Ingredients

1 zucchini squash
1 yellow squash
1/2 white onion
6-7 baby bella mushrooms
1 can black beans
3 T preferred seasoning
1 C shredded cheddar cheese
1 C shredded pepper jack cheese
14 6 inch tortillas
2 roma tomatoes, diced (optional) 
For Sour Cream
1/2 C Sour Cream
2-3 T minced cilantro

Directions
Preheat oven to 325 Degrees F, and prepare pan with nonstick spray on stove top over medium heat.

Dice the squash, and onion into small cubes, and slice the mushrooms.  Put all into the pan, and sauté about five minutes.

Add seasoning with about 1/4 C water, and allow to cook until reduced, 5-7 minutes.

Drain and rinse black beans, add to the pan.  Stir until heated through, do not overcook or beans will become mushy.

Assemble tacos by sprinkling cheese on tortilla, then putting about 1/4 C of veggie mix down the middle.  Roll taco tightly, and place in greased pan seam side down.

Bake tacos 15-25 minutes, depending on how crunchy you want them to be.

While tacos are baking, mix sour cream and cilantro, and chop tomatoes if using.
